you can use Joomla Language override to change any of the texts of Taxi Booking.

I don't think you understand my question.
I am looking for a feature where the client does not have to enter a time or date but just click a "Book Now" option.
I want to know if they can book a quick pickup in the here and "NOW."

Hi there,
it is impossible to make an immediate booking - the software is unsuitable for on-demand bookings and taxi-hailing. For this, there must be car/driver tracking and client location tracking but this requires additional services (which are paid in most cases), server resources and many privacy issues.
Taxi Booking actually takes into account the time for a car to get from the Base to the pick-up (optional) and from the Drop-off to the next Pick-up and this way prevents double bookings.
