sorry for the late reply.
Orders that go through online payment processors will be marked as Accepted as soon as the payment has gone through.
Cash orders will always remain in Waiting status as there is no way for them to be confirmed automatically and you probably don't want to get any Spam orders where customers will not show up for the Pickup.
You can control which emails go out to the customer through the payment method Configuration tab - including the Cash payment method. This way it will seem like there is no Waiting status and customers will receive Accepted orders email notifications only.
