Hi, I want to be able to make text changes to the email that gets sent to the customer, as well as ad in hyperlinks. How/Where do we do this?

you can change any of the texts in the order email either via the language .ini files or via Joomla language override.
We recommend the second option as language files will get overridden next time you update Taxi Booking and you will lose your changes but if you use Joomla language override your changes will remain. Here is an article on how to make use of Joomla language override.
You can also add additional information to emails including hyperlinks via the back end Settings > Order email settings where you have 2 extra fields for Header and Footer of the Order email.
