Hi Sarah,
Unfortunately "Bank transfer" is not a payment method but you can duplicate Cash payment method and call it Bank transfer. Then in Order emails (Taxi Booking > Settings > Order email settings) you can add your Bank details in Header or Contact information (Footer) of the email so your customers can make the transfer.
